Caviar Egg Parfait


1/2 ounce black or red Caviar
2 whole eggs
1 tsp. fresh chives, chopped
1 tbsp. half and half
1/2 tsp. unsalted butter
Salt and Pepper to taste
1 branch fresh chervil


  1. Mix eggs, half and half, salt and pepper in small bowl, and scramble with butter in saute pan until done.
  2. Fold with fresh chives and place in parfait glass. Garnish with 1/2 ounce Caviar and fresh chervil
