Herb Biscuits
Makes 12.
2 cups sifted all-purpose flour
2 1/4 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup grated Parmesan cheese
2 Tablespoons freshly minced herbs (oregano, savory, rosemary, majoram, and parsley)
1/3 cup butter
1 egg
1/2 cup buttermilk
- Preheat oven to 425 degrees F. Lightly grease a cookie sheet.
- Combine flour, baking powder, baking soda, salt, cheese and herbs in a bowl. Add butter in chunks and work into dry ingredients
- until mixture resembles coarse meal.
- Mix egg and buttermilk together and add to dry ingredients. Mix
- until a soft dough forms. Roll dough, on a floured surface, to a 1/2-inch thickness. Cut out circles with a cookie or biscuit cutter.
- Place biscuits on prepared cookie sheet and bake 12 to 15 minutes, or until scones are browned and well-risen.
