Maple Glazed Squash With Curry
2 acorn squash
2 tbs each maple syrup and brown sugar
2 tsp apple cider vinegar
1/4 tsp each cinnamon and salt
1/2 tsp curry powder
- Pierce squash in several places. Microwave on high 2 min. Let cool slightly. Cut out stem, then cut in half lengthwise and scoop out seeds.
- Place in baking pan, cut side up, add water to come up 1 inch. Cover with foil, bake at 375F for 30 min. Stir together maple syrup, brown sugar, vinegar, cinnamon, salt and curry powder. Remove squash from oven, brush with mixture. Return to oven and bake 15 min. uncovered.
