Winter Squash Soup
About 5 cups.
2 cups cooked winter squash, put through a strainer
3 cups milk
3 tablespoons grated onion
1/2 teaspoon grated fresh ginger
Salt to taste
3 Tablespoons butter
- Mix the squash, milk, onion and ginger in a pot and cook over moderate heat for about ten minutes. Season with salt.
- You may thin the soup with more milk, water or stock. Stir in the butter just before serving.
