Winter Squash Soup


About 5 cups.


2 cups cooked winter squash, put through a strainer
3 cups milk
3 tablespoons grated onion
1/2 teaspoon grated fresh ginger
Salt to taste
3 Tablespoons butter


  1. Mix the squash, milk, onion and ginger in a pot and cook over moderate heat for about ten minutes. Season with salt.
  2. You may thin the soup with more milk, water or stock. Stir in the butter just before serving.
